How I Freeze Fresh Rosemary for Winter

Rosemary is another herb I like to preserve when I have more than I can use fresh.

The process is identical to basil and parsley. Wash it well, dry it extremely thoroughly, then freeze it in a way that makes it easy to grab only what you need later.

I use frozen rosemary constantly in cooked dishes through the colder months, so having it prepped ahead saves me from buying dried rosemary. This has even more flavor!

A few things I’ve learned along the way:

  • My freezer method for all herbs is the same.

  • Let it dry completely - moisture is what creates excess ice.

  • Remove any damaged or wilted pieces before freezing.

  • I prefer to use a salad spinner to remove all excess moisture.

  • Use it straight from the freezer to give your cooked dishes a beautiful aroma and flavor.
