Rosemary Lamb & Onions

Ingredients

  • Lamb on the bone

  • Olive oil

  • 1 onion, sliced

  • Fresh rosemary

  • Salt

  • Black pepper

  • ½ cup dry white wine

  • ½ cup water

Method

  • Heat olive oil in a pan over medium heat.

  • Add the lamb and sear on all sides until golden and lightly charred.

  • Pour in the white wine and let it cook off completely.

  • Add the sliced onions and rosemary.

  • Pour in the water, then season with salt and pepper.

  • Cover and let it cook down about 45 minutes, until the lamb is tender and the onions are soft
