Mamma’s Fruit Tart

Ingredients

  • 3 ½ cups flour

  • 2 teaspoons baking powder

  • ¾ cup sugar

  • Pinch of salt

  • 3 eggs, beaten

  • ½ cup vegetable oil

  • 3 tablespoons anisette or sambuca

  • 1 teaspoon vanilla extract

  • Zest of 1 lemon

  • Jam, preserves, or fruit spread (for topping)

Method

  • Preheat oven to 350 degrees.

  • In a large bowl, combine all the ingredients.

  • Mix until soft dough forms – keep mixing until everything is fully incorporated.

  • Transfer dough into a tart pan and press it down evenly using your hands or a tart tamper.

  • Spread your jam or fruit mixture evenly over the top.

  • Bake for 15 minutes on the middle rack, then move to the top rack and bake for another 15 minutes, until lightly golden.
